Southwestern Black Bean Burgers with Chipotle Mayonnaise
3 cup cooked quinoa, 1 cup uncooked with 2 cups water
2 15 oz. cans black beans, rinsed
2 tbsp. water
4 oz. chopped green chilies
1 tsp. ground cumin
1 tsp. course ground black pepper
1 tsp. paprika
1 tsp. dark chili powder
1 tsp. seasoning salt
1 tsp. oregano
1 tsp. chopped parsley
4 cloves minced garlic
2 tbsp. Olive oil
8 hamburger buns of choice
3 mashed chipotle peppers
1 cup lite mayonnaise
¼ tsp. granulated garlic
¼ tsp. ground cumin
Place the uncooked quinoa in a sauce pan with the water. Bring to a boil and stir. Reduce the temperature to simmer and cover. Simmer for 15 minutes or until the quinoa is white and spiral threads begin to appear. Remove from the heat and drain off any excess liquid. Let the cooked quinoa cool to room temperature before proceeding.
Place the rinsed black beans in a food processor with two tablespoons of water and pulse until the mixture is thick and creamy. Move the black bean mixture to a large mixing bowl and add the cooked quinoa, minced garlic, chopped green chilies, and all of the dry seasonings. Mix until you have a uniform mixture. Refrigerate for 1 hour to firm up the mixture. Remove from the refrigerator and divide into eight equal balls. Press each ball into a ½ inch burger and place on a parchment lined cookie sheet. Brown the burgers for one minute per side. Place your heat proof fry pan in the oven at 400 degrees and bake for 15 minutes. Remove from the oven and rest 5 minutes before serving.
