Double Chocolate Peanut Butter No Bake Cookies

2 cups granulated sugar

1/2 cup milk

8 tbsp.butter (1 stick), cut into pieces

1/4 cup unsweetened cocoa powder

3 cups old fashion rolled oats, not instant

1 cup smooth peanut butter

1 cup dark chocolate chips

1 tbsp. vanilla

1/4 tsp. salt

Basic Preparation

Line two cookie sheets with parchment paper and set aside.Add the sugar, cocoa powder, butter, and milk to a medium sauce pan. Place over medium heat and stir to combine. Continue to stir until the mixture begins to boil. Reduce the heat to simmer and boil for one minute, while continuing to stir.

Immediately remove from the heat and add the vanilla, salt, and peanut butter. Stir to combine evenly. Now, add the rolled oats and chocolate chips. Fold to combine well. Using a tablespoon, drop spoonfuls on to the parchment paper covered cookie

sheets, leaving space between the cookies. Refrigerate for one hour to allow to set up. Move to a display plate or storage container.

Yield: 24 cookies
