Cheesecake stuffed chocolate chunk banana bread


16 oz. cream cheese, softened to room temperature
1/2 cup granulated sugar
2 eggs, beaten
4 tsp. vanilla extract

(banana bread batter)

4 ripe medium bananas, pureed or mashed
1/2 cup salted butter, melted
1/2 cup maple syrup
4 beaten eggs
4 tsp. vanilla extract
3 cups all-purpose flour
3 tsp. baking soda
1 tsp ground cinnamon
1 tsp. salt
2 cups semi-sweet chocolate chips
Basic Preparation

Preheat the oven to 350 degrees.  Spray a 9” springform pan with release and line with parchment paper. In a medium bowl, beat together the cream cheese, sugar, egg, and vanilla until smooth and creamy. Pour the mixture into the prepared springform pan and set aside.

Using a large bowl, combine the banana, egg, vanilla, butter and maple syrup. Mix until evenly combined. In a separate bowl, mix the flour, cinnamon, salt, and baking soda until evenly combined.  Pour the dry mixture into the wet mixture and fold together until just combined. Fold in the chocolate chips and pour the batter over the cheesecake batter.  Spread to cover evenly.

Place into the preheated oven and bake for 50 minutes, or until an inserted toothpick pulls out clean.  Cool to room temperature before removing the springform sides and serving.
