Crispy Onion, Bacon and Cheddar Cornbread 

1 cup all-purpose flour
1 cup cornmeal
2/3 cups granulated sugar
3 1/2 tsp. baking powder
1 tsp. salt
1 1/2 cups crispy onions divided 1 cup, 1/2 cup
2/3 cup crumbled cooked bacon
1 cup grated cheddar cheese
1 beaten egg
1 cup milk
1/3 cup olive oil
cooking spray

Basic Preparation

Spray a 9″x9″ baking dish with release. Preheat the oven to 400 degrees. Place all of your dry ingredients into a medium bowl and mix to combine well. Now, add the bacon, cheddar and 1 cup of crispy onions.  Continue to mix until evenly combined.
Using a spatula, make a well in the center of the bowl and set aside. Mix the egg, olive oil, and milk in a small bowl and pour into the well.  Fold the dry mixture into the wet mixture until well combined. Do not over mix or gluten will begin to form.
Pour the mixture into the prepared dish and top with the remaining crispy onions.  Bake for 25-30 minutes or until an inserted toothpick pulls out clean. Rest for 10 minutes before cutting.
