Fall Harvest Crockpot Apples
8-9 firm red apples, cored and sliced
1/2 cup coarsely chopped walnuts
1/2 cup butter
1/2 cup pure maple syrup
2 tbsp. lemon juice
1 tsp. vanilla extract
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. allspice
pound cake or vanilla ice cream
nutmeg for garnish dusting
Place the cored and sliced apples into your crockpot liner. Next, add the chopped walnuts and mix well.
Now, add the butter, maple syrup, lemon juice, vanilla, and all of the seasonal spices to a sauce pan and heat slowly. As the mixture cooks, stir frequently to combine. Just before the mixture comes to a boil, remove from the heat and pour evenly over the apples and walnuts. Cover the crockpot and set on low. Cook for 4 hours, stirring occasionally.
When the apples are ready, serve warm over either sliced pound cake or vanilla ice cream. Top with whip topping and dust with nutmeg.
