Grilled Fresh Fruit Kabobs
2 cups pineapple chunks, cut into 1″ pieces
2 cups peaches, chunks
2 cups cantaloupe, chunks
2 cups strawberries, stems removed
coconut oil spray
1 cup pure maple syrup
1/2 cup fine chopped pecans
Soak the skewers in water for at least 2 hours. This will prevent the skewers from burning while on the grill.
Prep the fruit no more than one day before you intend to make this recipe. Starting with a strawberry, alternate the fruit until the skewer is full. Continue the process until all of the fruit is on skewers. Next, spray all of the kabobs with the coconut spray. This will prevent sticking on the grill.
Now mix the maple syrup and chopped pecans in a bowl and set aside.
Preheat your grill to medium heat and place the kabobs on the grill. Grill for no more than 4 minutes, 2 minutes per side. Remove to a display plate and drizzle with the maple mixture. Serve immediately.
