Half Time Salsa

12 oz. whole kernel corn, canned or frozen
4 oz. slice black olives
11/2 cups diced roma tomatoes
3/4 cup diced red onion
1 red bell pepper, seeded and diced
1/3 cup chopped cilantro
2 ripe avocados, seed removed and diced
1 tsp. 6 pepper blend or 1 chopped jalapeno
4 cloves minced garlic
1 tsp. seasoning salt
1 tsp. ground cumin
2 tbsp. olive oil
2 tbsp. lime juice

Basic Preparation

Place the corn, tomato, black olives, onion, bell pepper, and cilantro in a large bowl and mix to combine well. Next, mix the lime juice, olive oil, minced garlic, and dry seasonings in a small bowl and pour over the ingredients. Again, mix to combine until all ingredients are well coated. Refrigerate for 2 hours.

Remove the salsa from the refrigerator and fold in the avocado. This process will ensure that the avocado doesn’t discolor. Move the salsa to a serving dish and serve with your favorite chips. Enjoy!!!
