Maple Pumpkin Cookies
 
Basic Ingredients

1 cup softened butter
2/3 cup brown sugar
1/3 cup sugar
1 large egg
1 tsp. vanilla extract
1 cup canned pumpkin
2 cups all purpose flour
2 tsp. ground cinnamon
1 tsp. ground ginger
1/4 tsp. allspice
1 tsp. baking soda
1/4 tsp. baking powder
1 cup chopped walnuts
1 cup maple baking chips

Basic Preparation

Preheat the oven to 350 degrees. In a large bowl, cream the butter and sugars until light and fluffy. Next, add the egg and vanilla and beat well to combine evenly.

In a medium bowl, add the flour salt, baking powder, baking soda, and fall spices. Mix to combine evenly. Now, add the dry mixture slowly to the pumpkin mixture while stirring. Continue to mix until all of the dry mixture has been combined with the wet mixture.

Next, add the maple chips and walnuts to the mixture and fold to combine evenly.Place rounded tablespoonfuls on to a parchment paper lined cookie sheet, keeping the cookies at least 2 inches apart. Bake for 10 minutes at 350 degrees. Remove from the oven and allow to cool to room temperature before handling.

Yield: 3 dozen cookies
Prep time: Active: 20 minutes
Cook time: 10 minutes at 350 degrees
