Shamrock Gooey Bars

1 package chocolate cake mix
1 1/2 cups powdered sugar
1/2 cup softened butter
1 tsp. almond extract
1 tsp. vanilla extract
4 large eggs, divided
2 cups chocolate and mint chips, divided
8 oz. softened cream cheese

Basic Preparation

Preheat the oven to 350 degrees. Spray a 9” x 13” baking dish and set aside. Beat the cake mix, butter, extracts, and two eggs in a large bowl using a power mixer. Press the mixture into the bottom of the baking dish. Now, sprinkle one cup of the chips over the surface of the batter and set aside.

Using a small bowl, beat the cream cheese, remaining two eggs, and powdered sugar until smooth and creamy. Pour the mixture over the raw batter and chips. Spread to cover evenly.  Sprinkle, the remaining chips evenly over the surface and bake for 30-35 minutes, or until the outer edges begin to turn brown. Remove to a to a rack and cool to room temperature.  Cut, into 24 bars (4 cuts by 6 cuts). Happy St. Patrick’s Day.
