Spinach and Bacon Tortellini Bake
24 oz. Alfredo pasta sauce, jar or home made
3/4 cup water
19 oz. cheese-filled tortellini, frozen or fresh
1 cup plus 2 tbsp. crumbled bacon
5 oz. course chopped baby spinach
2 cups shredded mozzarella cheese,divided
1 tsp. dry basil
Preheat the oven to 350 degrees and spray a 9″x13″ baking dish with release. Next, combine the Alfredo sauce and water in a medium bowl.
Arrange half of the tortellini on the bottom of the dish. Now, sprinkle 1/2 cup of the crumbled bacon over the tortellini. Next, spread half of the chopped spinach over the bacon, and follow that with half of the mozzarella cheese. Finally, top everything in the dish with half of the Alfredo sauce. Repeat the layers one more time and sprinkle the top of the dish with the two tablespoons of crumbled bacon and dry basil.
Spray one side of a piece of foil and cover the dish. Bake for 40 minutes at 350 degrees. Remove the foil and bake an additional 15 minutes to make everything hot and bubbly. Remove and rest for 10 minutes before serving.
